'Scotland is the world capital of fish for breakfast. During 10 days in Scotland I ate smoked haddock topped with an orange-yoked poached egg; scrambled eggs and smoked salmon; proper Scottish kippers on the bone, with plenty of melted butter and a fat pink fillet of trout, masterly cooked by Elaine Murdoch, mother of five and hostess of Lochwood Farm Steading - the farmhouse bed-and-breakfast where we stayed one night.

Once upon a time, they served fish like that on the luxury transcontinental trains in the United states. No kidding.'

Raymond Apple, restaurant critic for The New York Times
